Ingredients
2 cups Spelt flour
1/2 cup oats
1/4 cup brown sugar
1/4 cup sucarat
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp baking powder
1/2 tsp salt
2 tbsp coconut oil, melted
3 medium ripe bananas, peeled
1/3 cup cinnamon applesauce
1/3 cup almond milk
1 tsp pure vanilla extract
1/2 cup dark chocolate bits (A chopped up dark chocolate bar works)
1/4 cup walnuts, chopped
1 ripe banana, cut into chunks
Additional chocolate to shave on top of cake (optional)
Instructions
Preheat oven to 350F
In a bowl combine flour, oats, sugars (brown and sucarat), cinnamon, nutmeg, baking powder and salt.
In a second bowl mash together coconut oil, 3 ripe bananas, apple sauce, almond milk, and vanilla.
Add contents of wet ingredients to dry ingredients. Mix until well moistened.
Fold in dark chocolate bits, walnuts and banana
Spread mixture evenly into a well greased bundt pan.
Top with chocolate shavings
Bake for 20 minutes or until a toothpick comes out clean.
Allow to cool completely before removing from pan.
The cake did stand up well to stacking, that was until a breeze came through and I almost lost three of them off the side of the deck.
