Ingredients for 8 parfaits2 cups chopped strawberries800gr soy or coconut yogurt1/4 cup agave nectar1/2 tsp ground vanilla bean1/4 cup ground almondsMarinate the strawberries in 2 tbsp of agave nectar. Mix the rest of the agave with the yogurt and the vanilla. To assemble, use a spoon and place a few strawberry pieces on the bottom of a wine glass. Using a different spoon add some yogurt, then more strawberries to cover all the yogurt surface. Sprinkle with 2 tsp ground almonds. Add a few spoonfuls of yogurt and top with a slice strawberry. Repeat for 8 servings.
