Ingredients
1 1/2 cups water
2 large lemons
1 cup grated ginger
1 1/4 cups sugar
Instructions
Bring the water to a boil.
Add the sugar, ginger and grated lemon zest.
Cook for 15 minutes and stir occasionally.
Remove from heat and stir in the juice of 2 lemons.
Strain through a fine sieve, pressing hard on the solids to extract all the liquid.
Let cool and fill into little bottles or jars.
Keep chilled in the fridge.
NOTES: The syrup keeps for about 1–2 weeks when stored in a fridge. Make a hot or cold drink with one part syrup to 4–5 parts water.
