Ingredients :

1 cup almonds (soaked, drained and rinsed)

4 cups water

stevia extract

1/4 tsp ground vanilla bean

Notes

* To make almond milk you need raw almonds that have been soaked for at least 8 hours to activate the enzymes so that the sprouting process starts. Make sure you that you wash the almonds with water after draining the soaking water.

* You can use any sweetener of your choice to sweeten up the milk, but after experimenting with all kinds of natural sweeteners I think that stevia extract works the best for a neutral tasting, slightly sweet and light milk. As a plus, the milk is completely sugar free.

* The vanilla bean powder gives a fuller milky taste and enhanced flavor as well as relaxing properties.

* Save the leftover pulp and dry it in a dehydrator, then grind and store it. It is a great raw flour to work with.

Instructions

Blend almonds and water . Using a nylon mesh bag or cheesecloth, strain the milk in a bowl. Squeeze the bag well, until the leftover pulp is almost dry. Add vanilla bean powder and a few drops of stevia in the milk and transfer is a glass jug. Keep in the fridge for 3 days. Shake before use.

Ideas

You can just drink a glass of almond milk straight, or use it to make hot chocolate, milkshakes, smoothies.
