Ingredients [Serves 2]-2 bundles green tea soba noodles [100gr]-8 dried shitake mushrooms-1 carrot-1 garlic clove-2 fresh spring onions-2 tbsp soy sauce-1 tsp grapeseed oil-1 tsp sesame oilBoil noodles for 4 minutes and drain. soak mushrooms in hot water until they are soft, chop carrot and mushrooms. In a wok add grapeseed oil and pureed garlic. Saute for 2 minutes, add veggies and the water from the mushrooms and cook for 5 more minutes. Add the soy sauce and the noodles and stir. Before serving top with bean sprouts, chopped spring onions and drizzle with sesame oil.
