DOMO KUN Peppermint Chocolate Chip Cupcakes
I LOVE the combo of peppermint and chocolate. As you can see here. So a peppermint chocolate cupcake sounded like the right way to go. And I added some chocolate chips, you know, for good measure. The secret ingredient in this? CHOCOLATE MILK. Mmm. Makes a difference. A good ‘ol chocolatey difference.
Since the Kid and I have been sketching DOMO lately:
I thought that the brown chocolate frosting would make a great character cupcake. Just a little fondant and there you go - a tasty DOMO KUN!
2 sticks of butter, softened
2 cups sugar
1 Tablespoon peppermint extract (the good stuff. Don’t cheap out, you bastard)
2-1/2 cups flour
1/2 cup Valrhona cocoa powder (again, don’t cheap out)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate milk
1/2 cup mini chocolate chips
Preheat your oven to 350 degrees. Prep a cupcake pan with liners.
